Ingredients

1 lb sweet potatoes, peeled and cubed
6 oz turkey sausage, crumbled
1 cup kale, finely chopped
1/2 cup bell pepper, diced
1/2 cup onion, diced
8 large eggs
1/2 cup milk
1 tsp salt
1/2 tsp black pepper
1 cup cheddar cheese, shredded
1 tbsp olive oil
1 tbsp fresh parsley, chopped

Instructions

1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat, add sweet potatoes and cook until they begin to soften, about 10 minutes.
3. Add turkey sausage to the skillet, cook until browned.
4. Add bell pepper and onion, cook until softened.
5. Stir in kale, cook for another 2 minutes.
6. In a large bowl, whisk eggs with milk, salt, and black pepper.
7. In a greased 9x13 inch baking dish, layer the sweet potato mixture evenly.
8. Pour egg mixture over the top, sprinkle cheddar cheese evenly.
9. Bake in the preheated oven for 30-35 minutes or until the eggs are set and cheese is golden brown.
10. Garnish with fresh parsley before serving.
