Savory Squash & Herb Casserole
A delightful twist on the classic squash casserole, this version combines fresh herbs and goat cheese for a gourmet touch. Perfect for summer gatherings and family dinners.

Ingredients
2 lbs yellow squash, sliced
1 medium onion, diced
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
2 cloves garlic, minced
1 tbsp fresh thyme, chopped
1 tbsp fresh rosemary, chopped
1 cup breadcrumbs
1/2 cup goat cheese, crumbled
1/4 cup grated Parmesan cheese
2 large eggs, beaten
1 cup milk
1/4 tsp nutmeg
Instructions
1. Preheat oven to 350°F.
2. In a large skillet, heat olive oil over medium heat. Add onion and squash, cooking until softened, about 8 minutes.
3. Stir in garlic, thyme, rosemary, salt, and pepper, cooking for another 2 minutes.
4. In a bowl, mix eggs, milk, and nutmeg. Add cooked squash mixture and combine.
5. Grease a 9x13-inch baking dish and pour the mixture in.
6. Sprinkle breadcrumbs, goat cheese, and Parmesan over the top.
7. Bake for 30-35 minutes until golden brown and set.
8. Allow to cool for 5 minutes before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 325°F for about 15 minutes or until warmed through.
