Savory Spinach Artichoke Delight

Ingredients
1 tbsp olive oil
1 medium onion, minced
2 cloves garlic, minced
1 (14 oz) can artichoke hearts, drained and chopped
10 oz fresh spinach, chopped
8 oz cream cheese, softened
1/2 cup sour cream
1/4 cup mayonnaise
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 tsp salt
1/2 tsp black pepper
Instructions
1. Preheat your oven to 350°F (175°C).
2. Heat olive oil in a skillet over medium heat and sauté the onion and garlic until soft.
3. Add the chopped artichoke hearts and spinach, cooking until the spinach is wilted.
4. In a large bowl, combine the cream cheese, sour cream, and mayonnaise until smooth.
5. Stir in the Parmesan cheese, mozzarella cheese, salt, and pepper.
6. Add the spinach and artichoke mixture to the cheese blend and mix well.
7. Transfer the mixture to a baking dish and bake for 25-30 minutes until bubbly and golden on top.
8. Serve warm with toasted bread or crackers.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 300°F until warmed through, or microwave in small increments, stirring frequently.
