Ingredients
1 lb ground beef
2 cups fresh spinach, chopped
1 onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 cup shredded cheddar cheese
1 can (10.5 oz) cream of mushroom soup
1 cup beef broth
2 cups cooked elbow macaroni
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
Instructions
1. Preheat your oven to 350°F.
2. In a large skillet, heat olive oil over medium heat.
3. Add diced onion, bell pepper, and minced garlic, sauté for 5 minutes.
4. Add ground beef, cook until browned and fully cooked.
5. Stir in chopped spinach, cooking until wilted.
6. Mix in cream of mushroom soup, beef broth, salt, and pepper, bring to a simmer.
7. Fold in cooked macaroni and half of the shredded cheese.
8. Transfer mixture to a greased 9x13 inch baking dish.
9. Top with remaining cheese.
10. Bake in preheated oven for 25 minutes or until cheese is bubbly and golden.
11. Let cool for a few minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F for 15-20 minutes or until thoroughly heated.
