Ingredients

4 large eggs
1/4 cup milk
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup fresh spinach, chopped
1 avocado, sliced
2 tablespoons feta cheese, crumbled
2 large flour tortillas
1/4 cup salsa
1/4 teaspoon red pepper flakes

Instructions

1. In a medium bowl, whisk together eggs, milk, salt, and pepper until well combined.
2. Heat olive oil in a non-stick skillet over medium heat. Add the egg mixture and cook, stirring occasionally, until just set.
3. Add chopped spinach to the eggs and cook for an additional minute until wilted.
4. Warm the flour tortillas in a dry skillet for about 30 seconds on each side.
5. Spread a layer of avocado slices over each tortilla.
6. Evenly divide egg and spinach mixture onto each tortilla.
7. Sprinkle crumbled feta cheese and a pinch of red pepper flakes over the eggs.
8. Roll up each tortilla tightly, enclosing the filling, and slice in half.
9. Serve immediately with salsa on the side.

Storage

Store any leftover burritos in an airtight container in the refrigerator for up to two days.
