Ingredients

2 lbs yellow squash, sliced
1 large onion, diced
1 cup breadcrumbs
1 cup shredded cheddar cheese
3 tbsp olive oil
2 cloves garlic, minced
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1/2 cup chopped fresh parsley

Instructions

1. Preheat the oven to 375°F (190°C).
2. In a large skillet over medium heat, warm the olive oil.
3. Add the onion and garlic, sauté until the onion is translucent, about 5 minutes.
4. Stir in the yellow squash, cumin, smoked paprika, salt, and pepper, cooking until the squash is tender, approximately 10 minutes.
5. Remove from heat and transfer the mixture to a greased baking dish.
6. Sprinkle the breadcrumbs and cheddar cheese evenly over the squash mixture.
7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
8. Garnish with fresh parsley before serving.

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 350°F (175°C) for 10-15 minutes, or until heated through.
