Savory Spiced Squash Casserole

Ingredients

2 lbs butternut squash, peeled and cubed
1 large onion, chopped
3 cloves garlic, minced
2 tbsp olive oil
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp smoked paprika
Salt and pepper to taste
1/4 cup chopped fresh parsley
1 cup shredded cheddar cheese
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
Butter for greasing

Instructions

1. Preheat your oven to 375°F (190°C).
2. Grease a 9x13 inch baking dish with butter.
3. In a large skillet over medium heat, add olive oil and sauté onions until translucent, about 5 minutes.
4. Add minced garlic, cumin, coriander, smoked paprika, salt, and pepper, and cook for another 2 minutes until fragrant.
5. Stir in cubed squash and cook, stirring occasionally, until slightly tender, about 10 minutes.
6. Transfer the squash mixture into the prepared baking dish and spread evenly.
7. Sprinkle cheddar cheese over the squash mixture.
8. In a small bowl, combine breadcrumbs and Parmesan cheese, then sprinkle evenly over the casserole.
9. Bake for 25-30 minutes, or until the top is golden brown and the squash is fully cooked.
10. Garnish with fresh parsley before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place a portion on a microwave-safe plate and heat in the microwave for 2-3 minutes until heated through, or reheat in a preheated oven at 350°F (175°C) for 10-15 minutes.
