Savory Slow Cooker Pepper Steak Deluxe

Ingredients

2 lbs flank steak, sliced into strips
1/4 cup all-purpose flour
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
1 large onion, sliced
2 green bell peppers, sliced
1 red bell pepper, sliced
4 cloves garlic, minced
1/4 cup soy sauce
1/4 cup beef broth
2 tbsp brown sugar
1 tbsp Worcestershire sauce
1 tsp ground ginger
2 tbsp cornstarch
2 tbsp water
Cooked jasmine rice, for serving

Instructions

1. In a bowl, combine flour, salt, and black pepper. Coat steak strips in the flour mixture.
2. Heat olive oil in a skillet over medium-high heat. Brown steak strips in batches and transfer to slow cooker.
3. In the same skillet, add onions and cook until translucent. Add garlic and sauté for another minute.
4. Add onions, garlic, green and red bell peppers to the slow cooker.
5. In a bowl, whisk together soy sauce, beef broth, brown sugar, Worcestershire sauce, and ground ginger. Pour over the beef and vegetables in the slow cooker.
6. Cover and cook on low for 6-7 hours or high for 3-4 hours, until beef is tender.
7. Mix cornstarch and water in a small bowl. Stir into the slow cooker to thicken the sauce, cooking for an additional 30 minutes.
8. Serve hot, over cooked jasmine rice.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the microwave on medium power until heated through, or in a skillet over medium heat, stirring occasionally.
