Savory Sausage & Spinach Breakfast Bake

Ingredients
1 lb pork sausage
10 large eggs
2 cups fresh spinach, chopped
1 cup grated cheddar cheese
1 cup milk
1/2 cup diced onions
1/4 cup chopped red bell peppers
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
Instructions
1. Preheat oven to 375°F.
2. In a skillet over medium heat, add olive oil and sauté onions, red bell peppers, and garlic until soft.
3. Add sausage to the skillet and cook until browned, breaking it into crumbles, about 8 minutes.
4. In a large bowl, whisk together eggs, milk, salt, and pepper.
5. Stir in chopped spinach and half of the grated cheese into the egg mixture.
6. Combine the cooked sausage mixture with the egg mixture and pour into a greased 9x13 casserole dish.
7. Sprinkle the remaining cheese on top.
8. Bake in the preheated oven for 30-35 minutes or until eggs are set and top is golden.
9. Let cool for 5 minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual portions in the microwave for 1-2 minutes or until heated through.
