Ingredients
1 lb breakfast sausage
2 cups frozen hashbrowns
1 cup shredded cheddar cheese
1/2 cup diced onions
1/2 cup diced bell peppers
4 large eggs
1/2 cup milk
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
2 tbsp butter, melted
Instructions
1. Preheat the oven to 375°F and grease a 9x13 inch baking dish.
2. Cook the sausage in a skillet over medium heat until browned. Drain excess fat.
3. In a large bowl, combine hashbrowns, cooked sausage, onions, bell peppers, and half the cheddar cheese.
4. In a separate bowl, whisk together eggs, milk, garlic powder, salt, and black pepper.
5. Pour the egg mixture over the hashbrown mixture and stir to combine.
6. Transfer the mixture to the prepared baking dish and sprinkle the remaining cheese on top.
7. Drizzle melted butter over the casserole.
8. Bake in the preheated oven for 35-40 minutes or until the top is golden brown and the casserole is set.
9. Allow to cool slightly before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual portions in the microwave for 1-2 minutes until warmed through.
