Savory Pumpkin and Apple Soup

A delightful twist on classic pumpkin soup balanced with sweet apples and aromatic spices, perfect for fall gatherings.

Ingredients

2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
1 tsp ground cinnamon
1 tsp ground cumin
1/4 tsp ground nutmeg
2 lbs pumpkin, peeled and cubed
2 large apples, peeled, cored, and cubed
4 cups vegetable broth
1 cup water
1/2 cup heavy cream
Salt and pepper to taste
Fresh parsley, chopped, for garnish

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add the onion and sauté until translucent, about 5 minutes.
3. Stir in the garlic, cinnamon, cumin, and nutmeg, and cook for another minute until fragrant.
4. Add the pumpkin and apples; stir to coat with spices.
5. Pour in the vegetable broth and water, and bring to a boil.
6. Reduce heat, cover, and simmer for 20-25 minutes, or until pumpkin and apples are tender.
7. Remove from heat and puree the soup using an immersion blender until smooth.
8. Stir in the heavy cream and season with salt and pepper.
9. Serve hot, garnished with fresh parsley.

Storage

Allow the soup to cool completely, then store in airtight containers in the refrigerator for up to 4 days.

Reheating

Reheat gently in a saucepan over medium heat, stirring occasionally, until heated through. Add a splash of water or broth if needed.
