Savory Pea and Almond Salad

Ingredients

2 cups frozen peas, thawed
1/2 cup slivered almonds, toasted
1/4 cup red onion, finely chopped
1/3 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
1/4 cup sour cream
2 tablespoons mayonnaise
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
Salt and pepper to taste

Instructions

1. In a large bowl, combine thawed peas, toasted almonds, red onion, feta cheese, and parsley.
2. In a small bowl, whisk together sour cream, mayonnaise, lemon juice, and lemon zest until smooth.
3. Pour the dressing over the pea mixture and gently toss to combine.
4. Season with salt and pepper to taste.
5. Chill in the refrigerator for at least 30 minutes before serving.

Storage

Store the pea salad in an airtight container in the refrigerator for up to 3 days.

Reheating

Serve the salad cold. There is no need to reheat.
