Ingredients

1 lb ground pork sausage
8 large eggs
2 cups shredded cheddar cheese
1 cup milk
1/2 cup diced onions
1/2 cup diced green bell peppers
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
4 cups cubed day-old bread

Instructions

1. Preheat oven to 350°F (175°C).
2. In a skillet over medium heat, cook the sausage until browned. Drain excess fat.
3. In a large bowl, whisk together the eggs, milk, thyme, salt, and pepper.
4. Add the bread cubes, cooked sausage, onions, and bell peppers to the egg mixture, and stir until well combined.
5. Pour the mixture into a greased 9x13 inch baking dish.
6. Top with shredded cheddar cheese evenly.
7. Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the top is golden brown.
8. Allow to cool slightly before serving.
