Ingredients

2 cans (15 oz each) navy beans
1/4 cup maple syrup
1/2 cup diced smoked bacon
1 medium onion, chopped
1/2 cup ketchup
1/4 cup molasses
1 tbsp apple cider vinegar
1 tbsp Dijon mustard
1/2 tsp smoked paprika
Salt and freshly ground black pepper, to taste

Instructions

1. Preheat your oven to 350°F (175°C).
2. In a large oven-safe pot, cook the diced bacon over medium heat until crisp. Remove and set aside.
3. In the same pot, sauté the chopped onion until translucent.
4. Add the drained navy beans, bacon, maple syrup, ketchup, molasses, apple cider vinegar, Dijon mustard, smoked paprika, salt, and pepper to the pot. Stir to combine.
5. Bring the mixture to a simmer, then transfer the pot to the preheated oven.
6. Bake uncovered for 45 minutes, stirring occasionally, until the sauce is thickened.
7. Remove from the oven and let cool slightly before serving.

Storage

Store the baked beans in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat the beans in a saucepan over low heat, stirring occasionally, until warmed through. Add a splash of water if necessary to loosen the sauce.
