Ingredients

8 oz elbow macaroni
1 cup mayonnaise
1 tbsp apple cider vinegar
1 tbsp Dijon mustard
1 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
1/2 cup diced celery
1/4 cup diced red onion
1/4 cup diced green bell pepper
1/4 cup diced red bell pepper
2 tbsp chopped fresh parsley

Instructions

1. Cook macaroni according to package instructions until al dente. Drain and rinse under cold water to cool.
2. In a large bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and black pepper until smooth.
3. Add the cooled macaroni, celery, red onion, green bell pepper, and red bell pepper to the bowl with the dressing. Toss to combine.
4. Sprinkle with fresh parsley and gently mix.
5. Cover and refrigerate for at least 1 hour before serving to meld flavors.
