Savory Lemongrass Chicken Soup

Ingredients

1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 tbsp ginger, minced
2 stalks lemongrass, smashed
4 cups chicken broth
2 cups water
1 lb boneless chicken thighs, cut into bite-sized pieces
1 cup carrots, sliced
1 cup mushrooms, sliced
1 cup snow peas
1 tbsp fish sauce
1 tbsp soy sauce
1 tbsp lime juice
1 tbsp brown sugar
Salt and pepper to taste
Fresh cilantro for garnish
Lime wedges for serving

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until fragrant.
3. Stir in ginger and lemongrass, cook for another minute.
4. Pour in chicken broth and water, bring to a simmer.
5. Add chicken thighs, carrots, and mushrooms, cook for 20 minutes.
6. Stir in snow peas, fish sauce, soy sauce, lime juice, and brown sugar, cook for 5 more minutes.
7. Season with salt and pepper to taste.
8. Remove lemongrass stalks before serving.
9. Garnish with fresh cilantro and serve with lime wedges.

Storage

Allow soup to cool completely, then store in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.

Reheating

Reheat gently on the stove over medium heat until hot, stirring occasionally.
