Savory Lemon Herb Slow Cooker Chicken

Ingredients

4 lbs whole chicken
1 large lemon, sliced
6 cloves garlic, minced
1 tbsp dried rosemary
1 tbsp dried thyme
1 tsp salt
1/2 tsp black pepper
1/4 cup olive oil
1 cup chicken broth

Instructions

1. Rinse and pat dry the chicken.
2. Season the inside of the chicken with salt and pepper, then stuff with lemon slices and minced garlic.
3. In a small bowl, mix olive oil, rosemary, thyme, salt, and pepper.
4. Rub the mixture over the exterior of the chicken.
5. Place chicken in the slow cooker and pour chicken broth around it.
6. Cover and cook on low for 6-7 hours or on high for 4 hours, until the chicken is tender and falls off the bone.
7. Once cooked, transfer chicken to a serving platter, slice, and serve.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the microwave or in a preheated oven at 350°F (175°C) until warmed through.
