Savory Italian Lasagna Soup

A delightful twist on traditional lasagna, this savory Italian lasagna soup combines hearty flavors with a comforting broth, perfect for cool evenings.

Ingredients

1 lb Italian sausage
2 cups marinara sauce
6 oz lasagna noodles, broken into pieces
4 cups chicken broth
1 cup diced tomatoes
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 medium onion, chopped
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
1/2 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
Fresh basil, for garnish

Instructions

1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
2. Add Italian sausage, cooking until browned. Drain excess fat.
3. Stir in marinara sauce, chicken broth, diced tomatoes, oregano, basil, salt, and pepper. Bring to a simmer.
4. Add broken lasagna noodles, cook until tender, about 12 minutes.
5. In a bowl, mix ricotta and Parmesan cheese together.
6. Serve soup in bowls, topped with a dollop of the cheese mixture and a sprinkle of mozzarella cheese.
7. Garnish with fresh basil before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pot over medium heat until warmed through, adding a splash of broth if needed.
