Savory Herbal Slow Cooker Chicken Soup

Ingredients
1.5 lbs chicken breasts
4 cups chicken broth
1 cup diced carrots
1 cup diced celery
1 cup diced onions
3 cloves garlic, minced
1 tsp thyme
1 tsp rosemary
1 bay leaf
0.5 tsp black pepper
0.5 tsp salt
0.5 cup peas
0.5 cup corn
1 tbsp lemon juice
2 tbsp fresh parsley, chopped
Instructions
1. Place chicken breasts in the slow cooker.
2. Add chicken broth, diced carrots, celery, onions, and minced garlic.
3. Season with thyme, rosemary, bay leaf, black pepper, and salt.
4. Cover and cook on low for 6 hours or until chicken is tender.
5. Remove chicken, shred it, then return it to the soup.
6. Stir in peas, corn, and lemon juice.
7. Cook for an additional 30 minutes on low.
8. Stir in fresh parsley before serving.
Storage
Store the soup in airtight containers in the refrigerator for up to 3 days.
Reheating
Reheat the soup gently on the stove over low heat until warm, stirring occasionally.
