Ingredients

3 lbs beef chuck roast

1/2 cup beef broth
1/4 cup balsamic vinegar
3 large carrots, peeled and chopped
4 medium potatoes, quartered
2 onions, sliced
4 cloves garlic, minced

Instructions

1. Season the beef roast with salt, pepper, thyme, rosemary, and garlic powder.
2. Heat olive oil in a skillet over medium-high heat and sear the roast until browned on all sides.
3. Place the seared roast in the slow cooker.
