Ingredients

1 lb pork sausage
1 cup chicken livers, chopped
1/2 cup bell peppers, diced
1/2 cup onions, diced
1/2 cup celery, diced
2 cups long-grain white rice
4 cups chicken broth
2 cloves garlic, minced
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp cayenne pepper
2 tbsp fresh parsley, chopped

Instructions

1. In a large skillet, heat olive oil over medium heat.
2. Add sausage and chicken livers, cooking until browned.
3. Add bell peppers, onions, and celery, sautéing until soft.
4. Stir in garlic and cook for 1 minute.
5. Add rice, stirring to coat in oil.
6. Pour in chicken broth, salt, black pepper, and cayenne pepper.
7. Bring to a boil, then reduce heat to low.
8. Cover and simmer for 18-20 minutes, until rice is cooked.
9. Remove from heat and fluff with a fork.
10. Stir in fresh parsley before serving.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat, adding a splash of chicken broth if needed to prevent drying out.
