Savory Herb Pork Chop Casserole

Ingredients

4 bone-in pork chops
1 tbsp olive oil
1 onion, sliced
8 oz mushrooms, sliced
2 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
1/4 cup grated Parmesan cheese
1 cup panko breadcrumbs

Instructions

1. Preheat oven to 350°F.
2. Season pork chops with salt and pepper.
3. Heat olive oil in a skillet over medium-high heat and sear pork chops on both sides until golden. Remove and set aside.
4. In the same skillet, add onions and mushrooms, sautéing until onions are translucent.
5. Add garlic and cook for an additional minute.
6. Stir in heavy cream, chicken broth, thyme, and rosemary. Bring to a simmer.
7. Return pork chops to the skillet, spooning sauce over them.
8. Transfer mixture to a baking dish.
9. Mix Parmesan cheese with panko breadcrumbs and sprinkle over the top.
10. Bake for 25-30 minutes, or until pork chops are cooked through and topping is golden brown.
11. Let rest for 5 minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place in an oven-safe dish covered with foil and warm in a preheated 350°F oven for 10-15 minutes.
