Ingredients
2 tbsp olive oil
1 large onion, finely chopped
3 cloves garlic, minced
2 lbs ripe plum tomatoes, peeled and diced
1 tsp salt
1/2 tsp black pepper
1 tbsp fresh basil, chopped
1 tbsp fresh oregano, chopped
1 tsp fresh thyme, chopped
1/2 tsp sugar
1/4 cup red wine (optional)
1/2 cup vegetable broth
1 tsp red pepper flakes (optional)
Instructions
1. Heat the olive oil in a large saucepan over medium heat.
2. Add the onion and garlic, sauté until onion is translucent.
3. Stir in the diced tomatoes, salt, and black pepper.
4. Add the fresh basil, oregano, thyme, and sugar.
5. Pour in the red wine and vegetable broth, stir to combine.
6. Bring the mixture to a simmer and reduce heat to low.
7. Cook uncovered for 45 minutes, stirring occasionally.
8. Add red pepper flakes if desired for extra heat.
9. Adjust seasoning as needed before serving.
