Ingredients
1 lb ground beef
1 lb ground pork
1 cup breadcrumbs
1/2 cup milk
2 large eggs
1 medium onion, finely chopped
2 cloves garlic, minced
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
1/4 cup parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup ketchup
2 tablespoons Worcestershire sauce
2 tablespoons olive oil
Instructions
1. Preheat your oven to 350°F (175°C).
2. In a large skillet, heat olive oil over medium heat and sauté onions and garlic until translucent, about 5 minutes.
3. In a large bowl, combine ground beef, ground pork, sautéed onions and garlic, breadcrumbs, milk, eggs, thyme, rosemary, parsley, salt, and black pepper.
4. Mix the ingredients gently until well combined.
5. Transfer the meat mixture into a greased loaf pan, pressing it down evenly.
6. In a separate bowl, mix ketchup and Worcestershire sauce, then spread this glaze over the top of the meatloaf.
7. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).
8. Remove from oven and allow to rest for 10 minutes before slicing and serving.
Storage
Store leftover meatloaf in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place slices of meatloaf in a microwave-safe dish and cover. Microwave on high for 1-2 minutes or until heated through.
