Savory Herb-Infused Chicken

Ingredients

4 lbs whole chicken
1/4 cup olive oil
2 tbsp lemon juice
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tbsp fresh parsley, chopped
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
1 lemon, sliced
2 cloves garlic, minced

Instructions

1. Preheat the oven to 375°F (190°C).
2. In a small bowl, mix olive oil, lemon juice, rosemary, thyme, parsley, garlic powder, onion powder, paprika, salt, and pepper.
3. Rub the mixture all over the chicken, including under the skin.
4. Stuff the cavity with lemon slices and minced garlic.
5. Place the chicken on a roasting pan and bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
6. Let it rest for 10 minutes before carving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes or until heated through.
