Savory Herb-Infused Beef Stew

Ingredients

2 lbs beef chuck, cubed
3 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
4 cups beef broth
2 carrots, sliced
3 potatoes, diced
1 cup peas
2 tbsp tomato paste
2 tsp Worcestershire sauce
1 tsp thyme
1 tsp rosemary
Salt and pepper to taste

Instructions

1. Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides.
2. Remove beef and set aside. In the same pot, add onions and garlic; sauté until translucent.
3. Stir in tomato paste, thyme, and rosemary.
4. Return beef to the pot and add beef broth, carrots, potatoes, Worcestershire sauce, salt, and pepper.
5. Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours.
6. Add peas and cook for an additional 15 minutes.
7. Adjust seasoning before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stove over medium heat until hot, stirring occasionally.
