1 lb ground beef
1 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 carrots, diced
2 stalks celery, diced
1 red bell pepper, diced
4 cups beef broth
1 can (14.5 oz) diced tomatoes
1 cup frozen peas
1 tsp dried thyme
1 tsp dried basil
1/2 tsp black pepper
1/2 tsp salt
1/4 cup grated parmesan cheese

Instructions

1. In a large pot, heat olive oil over medium heat and brown the ground beef.
2. Add chopped onion and minced garlic to the pot and sauté until fragrant, about 3 minutes.
3. Stir in diced carrots, celery, and red bell pepper; cook for another 5 minutes until softened.
4. Pour in beef broth and add diced tomatoes, frozen peas, dried thyme, dried basil, black pepper, and salt.
5. Bring the mixture to a boil, then reduce heat and let simmer for 20 minutes, stirring occasionally.
6. Serve hot, garnished with grated parmesan cheese.

Storage

Allow the soup to cool completely, then store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stove over medium heat until warmed through, or microwave in a microwave-safe bowl on medium power, stirring occasionally.
