Savory Herb Egg Sandwich

A delightful twist on the classic egg sandwich, featuring a medley of fresh herbs, creamy avocado, and a touch of tangy feta cheese, perfect for a fulfilling breakfast or brunch.

Ingredients

2 large eggs
1/4 cup fresh parsley, chopped
1/4 cup fresh chives, chopped
1/4 cup feta cheese, crumbled
1/2 avocado, sliced
2 slices whole-grain bread
1 tbsp unsalted butter
Salt and pepper to taste
1 tbsp olive oil

Instructions

1. In a bowl, whisk eggs with salt, pepper, and half the parsley and chives.
2. Heat olive oil in a skillet over medium heat, pour in the eggs, and scramble gently.
3. Toast the bread slices and spread butter on one side of each slice.
4. Layer the scrambled eggs, avocado slices, feta cheese, and remaining herbs on one slice of bread.
5. Top with the second slice, buttered side down, and slice the sandwich in half.

Storage

Wrap the sandwich tightly in plastic wrap and store in the refrigerator for up to 24 hours.

Reheating

Reheat in a skillet over medium heat for 3-4 minutes on each side until warmed through.
