Savory Herb Eclairs
Reimagined as a savory delight, these eclairs are filled with a rich herb-infused cream cheese. Topped with a sprinkle of coarse sea salt and herbs, they make an elegant appetizer or snack perfect for any gathering.

Ingredients
1 cup water
1/2 cup unsalted butter, cubed
1 cup all-purpose flour
4 large eggs
1/2 tsp salt
8 oz cream cheese, softened
1/4 cup fresh chives, finely chopped
1/4 cup fresh parsley, finely chopped
1 clove garlic, minced
1/4 tsp black pepper
Coarse sea salt for topping
Herbs for garnish (optional)
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. In a medium saucepan, bring water and butter to a boil over medium heat. Add flour and salt, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.
3. Remove from heat and let cool for 5 minutes. Beat in eggs one at a time, mixing well after each addition until smooth.
4. Transfer dough to a piping bag and pipe 3-inch logs onto the prepared baking sheet, spacing them about 2 inches apart.
5. Bake in preheated oven for 15 minutes. Reduce temperature to 375°F (190°C) and bake for another 10 minutes, or until golden brown. Allow to cool completely.
6. For the filling, in a bowl, combine cream cheese, chives, parsley, garlic, and black pepper until smooth.
7. Slice cooled eclairs in half lengthwise and pipe or spoon herb cream cheese into each.
8. Replace tops and sprinkle with coarse sea salt and optional herbs for garnish.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F for 5-7 minutes until warmed through.
