Ingredients
2 lbs yellow squash
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1 tbsp fresh thyme, chopped
1 tbsp fresh rosemary, chopped
1 tsp garlic powder
1/2 tsp black pepper
1/4 tsp salt
2 tbsp olive oil
Instructions
1. Preheat the oven to 375°F (190°C).
2. Slice the yellow squash into 1/4-inch rounds and set aside.
3. In a small bowl, mix together breadcrumbs, Parmesan cheese, thyme, rosemary, garlic powder, pepper, and salt.
4. Lightly coat the squash slices with olive oil.
5. Dredge each slice in the breadcrumb mixture, pressing gently to adhere the coating.
6. Place the coated squash slices on a baking sheet lined with parchment paper.
