Ingredients
2 lbs boneless skinless chicken breasts
1 cup all-purpose flour
1 cup seasoned breadcrumbs
2 large eggs
1/4 cup milk
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp salt
1/2 tsp black pepper
1/4 cup grated Parmesan cheese
2 tbsp olive oil
1 lemon, sliced
Instructions
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a shallow dish, combine the flour, garlic powder, onion powder, salt, and pepper.
3. In a separate shallow dish, whisk together the eggs and milk.
4. In a third dish, mix breadcrumbs, thyme, rosemary, and Parmesan cheese.
5. Coat each chicken breast in the flour mixture, then dip in the egg mixture, and finally coat with the breadcrumb mixture.
6. Heat olive oil in a skillet over medium heat and sear each chicken breast for 2 minutes on each side until golden brown.
7. Transfer chicken to the prepared baking sheet and bake for 20 minutes or until internal temperature reaches 165°F (74°C).
8. Serve hot with lemon slices on top.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes until heated through, or microwave until warm.
