Savory Herb Cabbage Soup

Ingredients

1 medium green cabbage (roughly chopped)
2 tbsp olive oil
1 large onion (diced)
3 cloves garlic (minced)
4 cups vegetable broth
1 can (14.5 oz) diced tomatoes
1 cup carrots (sliced)
1 cup celery (sliced)
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp smoked paprika
Salt and pepper to taste
1/4 cup fresh parsley (chopped)

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add diced onions and cook until translucent, about 5 minutes.
3. Stir in minced garlic and cook for another minute until fragrant.
4. Add chopped cabbage, sliced carrots, and celery; cook for 5 minutes, stirring occasionally.
5. Pour in vegetable broth and add diced tomatoes, thyme, rosemary, and smoked paprika.
6. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 25 minutes.
7. Season with salt and pepper to taste.
8. Serve hot, garnished with fresh parsley.

Storage

Reheating

Reheat on the stovetop over medium heat until warmed through, or microwave on high in a microwave-safe bowl for 2-3 minutes.
