Ingredients

2 lbs butternut squash, peeled and cubed
3 tbsp olive oil
1 cup grated Parmesan cheese
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tsp garlic powder
Salt and pepper to taste
1 cup panko breadcrumbs
2 tbsp unsalted butter, melted

Instructions

1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
2. In a large bowl, combine the butternut squash cubes with olive oil, rosemary, thyme, garlic powder, salt, and pepper. Toss until the squash is evenly coated.
3. Transfer the seasoned squash into the prepared baking dish, spreading it out evenly.
4. Mix the grated Parmesan cheese and panko breadcrumbs in a separate bowl. Sprinkle this mixture over the butternut squash evenly.
5. Drizzle the melted butter over the breadcrumb topping.
6. Bake in the preheated oven for 45 minutes or until the topping is golden brown and the squash is tender.
7. Let it cool for a few minutes before serving.
