Ingredients
2 lbs beef chuck roast, cut into 1-inch cubes
3 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
4 cups beef broth
2 cups carrots, sliced
2 cups potatoes, diced
1 cup celery, sliced
2 tbsp tomato paste
1 tbsp Worcestershire sauce
2 tsp dried thyme
1 tsp dried rosemary
1 bay leaf
Salt and pepper to taste
Instructions
1. In a large pot, heat olive oil over medium-high heat.
2. Add beef and brown on all sides, then remove from pot.
3. In the same pot, add onion and garlic, sauté until softened.
4. Stir in tomato paste and cook for 1 minute.
5. Return beef to the pot and add beef broth, Worcestershire sauce, thyme, rosemary, and bay leaf.
6. Bring to a boil, then reduce heat, cover, and simmer for 1 hour.
7. Add carrots, potatoes, and celery, and continue to simmer for another 30 minutes or until vegetables are tender.
8. Season with salt and pepper to taste. Remove bay leaf before serving.
Storage
Allow the stew to cool to room temperature, then transfer to an airtight container. Store in the refrigerator for up to 3 days or freeze for up to 2 months.
Reheating
Reheat gently on the stovetop over medium heat, stirring occasionally, until heated through. Alternatively, reheat in the microwave in a covered microwave-safe dish, stirring halfway through.
