Ingredients

4 medium sweet potatoes
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

Instructions

1. Preheat the oven to 400°F (200°C).
2. Wash and scrub the sweet potatoes, then slice them into 1/4-inch thick rounds.
3. In a large bowl, combine olive oil, dried thyme, dried rosemary, garlic powder, onion powder, salt, and black pepper.
4. Add the sweet potato slices to the bowl and toss until evenly coated with the herb mixture.
