Savory Herb and Mushroom Dumplings

Ingredients
2 cups all-purpose flour
3/4 cup water
1/2 teaspoon salt
1 tablespoon olive oil
1 cup chopped mushrooms
1/2 cup minced onion
1 clove garlic, minced
1 tablespoon soy sauce
1 tablespoon chopped fresh parsley
1 teaspoon dried thyme
1/2 teaspoon black pepper
1 tablespoon sesame oil
Instructions
1. In a bowl, mix flour and salt, then slowly add water and olive oil, kneading until a dough forms. Let it rest for 30 minutes.
2. In a pan, heat sesame oil over medium heat and sauté onion and garlic until fragrant.
3. Add mushrooms, soy sauce, parsley, thyme, and pepper. Cook until mushrooms are tender. Remove from heat and let cool.
4. Roll out the dough on a floured surface and cut into circles using a biscuit cutter.
5. Place a spoonful of mushroom mixture in the center of each circle. Fold and seal the edges to form dumplings.
6. Steam dumplings for 10-12 minutes or until the dough is cooked through.
7. Serve warm with a soy sauce dip if desired.
Storage
Store leftover dumplings in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, steam the dumplings for 5 minutes or until heated through.
