Savory Herb and Cheese Roasted Spaghetti Squash

Ingredients

1 large spaghetti squash
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried thyme
1 tsp dried oregano
1/2 cup grated Parmesan cheese
1/4 cup crumbled feta cheese
Salt and pepper to taste

Instructions

1. Preheat your oven to 400°F (200°C).
2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
3. Drizzle the olive oil over the cut sides of the squash and sprinkle with garlic powder, thyme, oregano, salt, and pepper.
4. Place the squash halves cut-side down on a baking sheet lined with parchment paper.
5. Roast in the preheated oven for 40-45 minutes or until the squash is tender and the edges are golden brown.
6. Remove the squash from the oven and let it cool slightly.
7. Once cool enough to handle, use a fork to scrape out the spaghetti-like strands from the squash into a large mixing bowl.
8. Stir in the grated Parmesan and crumbled feta cheese until well combined.
9. Serve warm and enjoy!

Store leftover spaghetti squash in an airtight container in the refrigerator for up to 3 days.
