Savory Herb & Cheese Scalloped Potatoes

Ingredients

2 lbs russet potatoes, thinly sliced
1 cup heavy cream
1 cup chicken broth
1 cup shredded Gruyère cheese
1/2 cup shredded Parmesan cheese
3 cloves garlic, minced
2 tbsp unsalted butter
1 tbsp fresh thyme leaves
1 tbsp fresh rosemary, chopped
1 tsp salt
1/2 tsp black pepper
1/4 tsp nutmeg
1 tbsp olive oil
1/4 cup breadcrumbs

Instructions

1. Preheat oven to 375°F (190°C).
2. Grease a 9x13 inch baking dish with olive oil.
3. In a saucepan over medium heat, melt butter and sauté garlic until fragrant.
4. Add heavy cream, chicken broth, salt, pepper, and nutmeg. Heat until simmering.
5. Layer half of the potatoes in the baking dish, sprinkle with half of the thyme, rosemary, Gruyère, and Parmesan.
6. Pour half of the cream mixture over the layers.
7. Repeat the layers with remaining potatoes, herbs, and cheeses.
8. Top with remaining cream mixture and breadcrumbs.
9. Cover with foil and bake for 45 minutes.
10. Remove foil and bake for an additional 15-20 minutes or until golden brown and bubbly.
11. Let cool slightly before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a microwave-safe dish or in the oven at 350°F until warmed through.
