Ingredients

8 large eggs
1/2 cup whole milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 cup diced sweet potatoes
1 cup chopped kale
1/2 cup caramelized onions
1/2 cup crumbled goat cheese
1 tablespoon chopped fresh thyme

Instructions

1. Preheat the oven to 375°F.
2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
3. Heat olive oil in an oven-safe skillet over medium heat. Add sweet potatoes and sauté for 5-7 minutes until slightly tender.
4. Stir in kale and continue to cook for another 2 minutes until wilted.
5. Pour the egg mixture over the vegetables and cook for 2-3 minutes until the edges start to set.
6. Sprinkle caramelized onions and goat cheese evenly over the top. Transfer the skillet to the preheated oven.
