Savory Ham and Butter Bean Casserole

Ingredients
1 lb smoked ham, cubed
2 cans (15 oz each) butter beans, drained and rinsed
1 cup diced onion
3 cloves garlic, minced
1 tbsp olive oil
1 1/2 cups chicken broth
1 tsp dried thyme
1 tsp paprika
1/2 tsp black pepper
1/4 cup fresh parsley, chopped
1/2 cup shredded cheddar cheese
Instructions
1. Preheat your oven to 350°F.
2. In a large skillet, heat olive oil over medium heat and sauté the onions until translucent.
3. Add minced garlic and cook for another 1 minute.
4. Stir in cubed ham and cook until slightly browned.
5. Add butter beans, chicken broth, thyme, paprika, and black pepper. Mix well.
6. Transfer the mixture into a casserole dish and bake for 25 minutes.
7. Sprinkle shredded cheddar cheese on top and bake for another 10 minutes or until cheese is melted and golden.
8. Garnish with fresh parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F for 10-15 minutes or until thoroughly heated.
