Ingredients
2 lbs fresh green beans, trimmed
1 lb cremini mushrooms, sliced
1 medium onion, diced
3 cloves garlic, minced
3 tbsp unsalted butter
1 cup heavy cream
1/2 cup vegetable stock
1 tbsp soy sauce
1/2 cup grated Parmesan cheese
1 cup panko breadcrumbs
1/2 cup sliced almonds
1 tsp salt
1/2 tsp black pepper
1/4 tsp nutmeg
2 tbsp olive oil
Instructions
1. Preheat the oven to 375°F.
2. Blanch the green beans in boiling water for 5 minutes, then drain and set aside.
3. In a large skillet, melt butter over medium heat. Add onions and garlic, sauté until translucent.
4. Add mushrooms to the skillet, cooking until they release moisture and begin to brown.
5. Stir in the heavy cream, vegetable stock, soy sauce, salt, pepper, and nutmeg. Simmer until the sauce thickens.
6. In a baking dish, combine the green beans with the creamy mushroom sauce.
7. In a small bowl, mix panko breadcrumbs, sliced almonds, olive oil, and Parmesan cheese. Sprinkle mixture over the casserole.
8. Bake for 20-25 minutes until the topping is golden brown.
9. Let cool for a few minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Preheat the oven to 350°F and reheat the casserole, covered, for 15-20 minutes until heated through.
