Savory Garlic Herb Potatoes

Ingredients
2 lbs russet potatoes
4 cloves garlic, minced
1/4 cup grated Parmesan cheese
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
Salt to taste
Black pepper to taste
Instructions
1. Preheat your oven to 400°F (200°C).
2. Wash and peel the potatoes, then cut them into 1-inch cubes.
3. In a large bowl, combine the potatoes, minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper. Toss until the potatoes are evenly coated.
4. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
5. Roast the potatoes in the preheated oven for 30-35 minutes, flipping halfway through, until they are golden brown and crispy on the outside.
6. Remove from the oven and sprinkle with grated Parmesan cheese while still hot. Serve immediately.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat potatoes in a preheated oven at 350°F (175°C) for 10-15 minutes until heated through.
