Ingredients
1.5 lbs baby potatoes
2 tbsp olive oil
4 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 cup grated Parmesan cheese
2 tbsp fresh parsley, chopped
1 tbsp fresh thyme leaves
1 tbsp lemon juice
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss the potatoes with olive oil, garlic, salt, and black pepper until evenly coated.
3. Spread the potatoes in a single layer on the prepared baking sheet.
4. Roast in the preheated oven for 25 minutes, then remove and sprinkle Parmesan cheese evenly over the potatoes.
5. Return to the oven and roast for an additional 10 minutes, or until the potatoes are golden brown and crisp.
6. Remove from the oven and sprinkle with fresh parsley, thyme, and drizzle with lemon juice before serving.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in a preheated oven at 350°F (175°C) for 10-12 minutes until heated through.
