Ingredients

2 cups fresh corn kernels
1 cup shredded sharp cheddar cheese
1/2 cup crumbled cooked bacon
1/4 cup chopped green onions
1 cup sour cream
1/4 cup melted unsalted butter
1/2 cup all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp black pepper

Instructions

1. Preheat oven to 350°F (175°C).
2. In a large mixing bowl, combine corn kernels, shredded cheddar cheese, crumbled bacon, and chopped green onions.
3. In a separate bowl, whisk together sour cream, melted butter, flour, baking powder, salt, and black pepper until smooth.
4. Pour the wet ingredients over the corn mixture and stir until thoroughly combined.
5. Grease a medium-sized baking dish and transfer the mixture into it, spreading evenly.
6. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the casserole is set.
7. Let it cool for a few minutes before serving.

Storage

Store leftover casserole in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 300°F (150°C) for 10-15 minutes until warmed through.
