Savory Collard Greens

Ingredients
2 lbs collard greens, chopped
1 large smoked ham hock
2 tbsp olive oil
1 large onion, diced
4 cloves garlic, minced
1 tsp red pepper flakes
4 cups chicken broth
2 tbsp apple cider vinegar
1 tbsp sugar
Salt and black pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and cook until soft and translucent, about 5 minutes.
3. Stir in the minced garlic and red pepper flakes, cooking for an additional 1 minute.
4. Place the smoked ham hock in the pot and pour in the chicken broth.
5. Bring to a simmer, cover, and let cook for 30 minutes.
6. Stir in the collard greens, apple cider vinegar, and sugar.
7. Cover the pot and simmer for 45-60 minutes until greens are tender.
8. Season with salt and black pepper to taste before serving.
Storage
Store leftover collard greens in an airtight container in the refrigerator for up to 3-4 days.
Reheating
Reheat in a saucepan over low heat, stirring occasionally, until warmed through.
