Ingredients

1 lb chicken breast, cubed
1 cup chicken broth
1 cup milk
1/2 cup heavy cream
1/2 cup all-purpose flour
1/4 cup unsalted butter
1 cup diced carrots
1 cup frozen peas
1 cup diced onions
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1 tbsp chopped fresh parsley
2 cups all-purpose flour (for biscuits)
2 tsp baking powder
1/2 cup cold unsalted butter, cubed (for biscuits)
1/2 cup milk (for biscuits)

Instructions

1. Preheat oven to 400°F.
2. In a large skillet, heat olive oil over medium heat. Cook chicken until no longer pink.
3. Add onions, carrots, and peas; sauté until onions are translucent.
4. Stir in flour, salt, and pepper; cook for another minute.
5. Gradually whisk in chicken broth, milk, and heavy cream to the mixture.
6. Bring to a simmer until thickened, then remove from heat.
7. In a bowl, mix flour and baking powder for biscuits. Cut in cold butter until crumbly.
8. Stir in milk until dough forms, then roll out and cut into biscuit shapes.
9. Pour chicken mixture into a casserole dish. Top with biscuit dough.
10. Bake for 20-25 minutes or until biscuits are golden brown.
11. Garnish with chopped parsley before serving.
