Savory Carrot and Split Pea Soup

Ingredients
1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 cups carrots, sliced
2 cups dried split peas
8 cups vegetable broth
1/2 tsp thyme
1/2 tsp smoked paprika
Salt to taste
Pepper to taste
1 bay leaf
2 tbsp fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add the onion and garlic, and sauté until the onion is translucent.
3. Stir in the carrots and cook for another 3-4 minutes.
4. Add the split peas, vegetable broth, thyme, smoked paprika, salt, pepper, and bay leaf.
5. Bring to a boil, then reduce heat to low and let simmer for 1-1.5 hours, stirring occasionally.
6. Once peas are tender, remove bay leaf.
7. Use an immersion blender to puree the soup to desired consistency.
8. Adjust seasoning as needed and serve with fresh parsley sprinkled on top.
Storage
Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
Reheating
Reheat in a saucepan over medium heat until warmed through, or microwave on high in 1-minute intervals, stirring in between.
