Savory Cabbage and Cheddar Casserole

Ingredients
1 medium head of cabbage, chopped
2 tablespoons butter
1 large onion, diced
3 cloves garlic, minced
1 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cups sharp cheddar cheese, shredded
1 cup heavy cream
1/2 cup breadcrumbs
2 tablespoons olive oil
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
2. In a large skillet over medium heat, melt the butter and sauté onions and garlic until softened, about 5 minutes.
3. Add chopped cabbage, thyme, salt, and black pepper to the skillet and cook until cabbage is slightly tender, about 10 minutes.
4. Transfer the cabbage mixture to the prepared baking dish.
5. In a bowl, mix shredded cheddar cheese with heavy cream and pour over the cabbage mixture.
6. In a small bowl, combine breadcrumbs with olive oil, then sprinkle over the casserole.
7. Bake in preheated oven for 25 minutes or until the top is golden and bubbly.
8. Let the casserole cool for 5 minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual portions in the microwave for 1-2 minutes or until heated through.
