Ingredients
6 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheddar cheese
1/2 cup diced bell pepper
1/4 cup chopped green onions
1/4 cup diced cooked ham
1 tablespoon butter for greasing
Instructions
1. Preheat your oven to 375°F (190°C) and grease a muffin tin with butter.
2. In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
3. Stir in the cheddar cheese, bell pepper, green onions, and diced ham.
4. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
5. Bake in the preheated oven for 20-25 minutes, or until the egg cups are set and lightly golden on top.
6. Allow to cool for a few minutes before removing from the tin. Serve warm.
Storage
Allow the egg cups to cool completely, then store in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place the egg cups on a microwave-safe plate and microwave on high for about 30-45 seconds until heated through.
