Ingredients

6 large eggs
1 ripe avocado
1 tbsp lime juice
1 tbsp finely chopped cilantro
1 tbsp finely chopped red onion
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp smoked paprika
1 tbsp crumbled bacon (optional)

Instructions

1. Start by boiling the eggs: place the eggs in a pot and cover with water.
2. Bring to a boil over medium-high heat, then cover, remove from heat, and let sit for 9 minutes.
3. Drain and cool the eggs under cold running water, then peel them.
4. Cut each egg in half lengthwise and carefully remove the yolks.
5. In a mixing bowl, mash the avocado until smooth.
6. Add the egg yolks, lime juice, cilantro, red onion, garlic powder, salt, and black pepper to the avocado.
7. Mix until creamy and well combined.
8. Spoon or pipe the avocado mixture back into the egg whites.
9. Sprinkle smoked paprika over the top and garnish with crumbled bacon if desired.

Storage

Store in an airtight container in the refrigerator for up to 2 days.
